Michael Bruno- Owner

Michael Bruno was born in Baton Rouge, Louisiana. He is first generation German and learned the language before English.

He was commissioned in the Marine Corps in 1990 and served in both Marine Divisions for 20 years - deploying in Operations Desert Storm and Restore Hope. Michael first became interested in baking and cooking while in college and decided to pursue his hobby in earnest approximately half way through his career.

Michael graduated from the pastry arts program at L’academie de Cuisine in Gaithersburtg Md in 2008. He holds a Bachelor of Arts from Marquette University and his Master’s of Science from The Naval Post Graduate School in Monterey.

In his spare time, Michael enjoys Porsche cars, playing accordion and exercise.




Mitchell Firis originally hails from Wadsworth Ohio and began cooking professionally in his teens at Michael Rizzi’s Italian Restaurant.

After three years of studies at The University of Akron (Marine Biology) Mitch realized his passions lay in the culinary field. He chose to obtain his Associates Degree at The Pennsylvania Culinary Institute.

Mitch was subsequently hired to cook at Gervasi Vinyards’ “The Twisted Olive” where his abilities and skills were quickly recognized with a promotion to “Sous Chef”.

Mitchell Firis joined The Blue Door team in the summer of 2017. In his spare time, Mitch enjoys collecting comic books, collecting and reading Stephen King novels and basketball. Mitch and his girlfriend Justeen are the proud parents of two children, Josie and Jude.
